Vodka Sauce, but healthy somehow (SCD, gluten free, sorta paleo bla bla bla)

Jimmy comes in swinging sausage to dishonor his Italian roots and create a vodka sauce that is actually SCD friendly. We’re substituting coconut cream for heavy whipping cream, using the proper types of canned tomato, and substituting zucchini noodles for pasta. Pretty heartbreaking stuff, but the end result is surprisingly good.

The coconut cream substitution looks terrifying, but it actually subs in quite nicely and results in us avoiding all the lactose in cream. We are still using butter and parmesan cheese, but these forms of dairy contain nearly no lactose so they are actually approved on the specific carbohydrate diet. Vodka and booze in general is a touchy issue when going SCD. In general you want to avoid or keep it light, but Jesus Christ we gotta live don’t we? Your best bet is low sugar forms of alcohol like a dry red wine, or some straight liquor! Works nicely here since vodka is part of the dish, and a 2 bottles of red would be nice while cooking or eating this alone. If you’re squeamish on booze then just don’t add it in to the sauce I guess.

Really the worst substitution is the zucchini noodles for the pasta. You just loose a lot of nice chewiness, and comfort. The zucchini noodles also serve to water the whole dish down. Finding an alternate SCD friendly pasta substitute is now a top priority.

The type of tomato sauce you use is nit picky, but technically if you want to make it SCD friendly then you want to get a can of whole peeled tomatoes from Italy. Those Ities are crazy about they’re labeling and not messing with their food so you’ll see that their canned tomatoes don’t have any crazy preservatives. Also according to SCD rules they need to be whole peeled tomatoes. I’m not super sure why, but I assume tomato puree must be more likely to have strange additives. The above pic was taken back when pooping my pants was socially acceptable. Then some years passed and I wasn't supposed to any more.
